Party fare doesn't have to be a minefield of fatty foods and fast-acting carbs. These elegant hors d'oeuvres offer a delectable bite of healthy smoked salmon that your guests are sure to love.

Here's what you'll need

This recipe takes just 15 minutes to prepare, 15 to bake, and serves 12. You'll need the following:

  • 24 slices cocktail rye bread
  • 30 ml (2 tbsp) lemon juice
  • 30 ml (2 tbsp) brewed black tea or vodka
  • 15 ml (1 tbsp) extra-virgin olive oil
  • 10 ml (2 tsp) Dijon mustard
  • Freshly ground pepper to taste
  • 250 g (8 oz) sliced smoked salmon, finely chopped
  • 35 g (1/4 cup) finely diced red onion
  • 45 ml (3 tbsp) chopped fresh dill, plus sprigs for garnish
  • 30 ml (2 tbsp) drained capers, rinsed and coarsely chopped

Put it all together!

  1. Preheat the oven to 160°C (325°F). Coat a baking sheet with nonstick spray and arrange the cocktail rye bread slices in a single layer on the baking sheet. Spray the tops of the slices lightly with nonstick spray. Bake the slices just until crisp (12 to 15 minutes).
  2. Whisk the lemon juice, tea (or vodka), oil, mustard, and pepper in a medium bowl. Add the smoked salmon, onion, dill, and capers. Toss to mix well.
  3. Shortly before serving, mound about one tablespoon of topping on each slice of toast and garnish each with a dill sprig. One serving is two canapés.
  4. The topping can be kept covered in the fridge for up to eight hours. Store the toasts in an airtight container at room temperature.
