The beauty about a good cobb salad is that it'll get even the most extreme carnivore to eat his or her greens. Here's a great version to try tonight.
Usually found on top of a stack of pancakes, maple syrup works wonders in savoury recipes as well. When mixed into a salad dressing, the syrup imparts a subtle sweetness and irresistible aromas than meld perfectly with crisped bacon.

2. In a large bowl, gently combine the lettuce, chicken or turkey, bacon, tomato, avocado, eggs and blue cheese.
3. For the dressing, in a small bowl, whisk together the vinegar, syrup, mustard, salt and pepper. Slowly whisk in the oil, then pour the mixture into the skillet and whisk it in with the reserved bacon fat. Heat over low heat until warm, about one minute.
4. To serve, pour the warm dressing over the salad and toss together thoroughly with salad spoons. Divide the salad between two plates.
The great thing about Cobb salad is that just about anything can go in it and it will still be delicious. If you don't have any chicken or turkey on hand, or if you prefer, add some chopped roast beef, pork tenderloin or even a can of drained tuna or some cooked shrimp!
