Cobb salad with warm bacon dressing

Usually found on top of a stack of pancakes, maple syrup works wonders in savoury recipes as well. When mixed into a salad dressing, the syrup imparts a subtle sweetness and irresistible aromas than meld perfectly with crisped bacon.

Salad

  • 5 thick slices bacon
  • 1 kg (4 c) chopped romaine lettuce
  • 350 g (1 1/2 c) cubed cooked chicken or turkey
  • 250 g (1 c) chopped tomato
  • 125 g (1/2 c) chopped Haas avocado
  • 2 hard-cooked eggs, chopped
  • 50 g (1/4 c) crumbled blue cheeseDressing
  • 30 ml (2 tbsp) red-wine vinegar
  • 15 ml (1 tbsp) maple syrup
  • 10 ml (2 tsp) Dijon mustard
  • 2 ml (1/2 tsp) salt
  • 1 ml (1/4 tsp) freshly ground black pepper
  • 15 ml (1 tbsp) extra-virgin olive oil1. For the salad, heat a medium nonstick skillet over medium-high heat and add the bacon. Cook, turning once, until crisp, four to five minutes per side. Transfer the bacon to a paper towel–lined plate to cool, then crumble. Reserve 45 millilitres (three tablespoons) of the bacon fat and keep warm in the skillet.

    2. In a large bowl, gently combine the ­lettuce, chicken or turkey, bacon, tomato, avocado, eggs and blue cheese.

    3. For the dressing, in a small bowl, whisk together the vinegar, syrup, mustard, salt and pepper. Slowly whisk in the oil, then pour the mixture into the skillet and whisk it in with the reserved bacon fat. Heat over low heat until warm, about one minute.

    4. To serve, pour the warm dressing over the salad and toss together thoroughly with salad spoons. Divide the salad between two plates.

Personalize It!

The great thing about Cobb salad is that just about anything can go in it and it will still be delicious. If you don't have any chicken or turkey on hand, or if you prefer, add some chopped roast beef, pork tenderloin or even a can of drained tuna or some cooked shrimp!
