Meat main dish: beef stroganoff

Here's a classic stroganoff, rich with sour cream, mushrooms and thinly sliced beef ­tenderloin. So what's new? The addition of chopped pickles to perk up the sauce. One bite and you'll never go back to your old recipe!

Beef Stroganoff

Serves 4

  • 45 g (3 tbsp) unsalted butter, divided
  • 1 large red onion, thinly sliced
  • 250 g (1/2 lb) small chestnut mushrooms, clean and halved
  • 625 g (1 1/4 lb) beef filet
  • 10 g (2 tsp) fresh green peppercorns in brine or dry black peppercorns, crushed
  • Salt
  • 30 ml (2 tbsp) Dijon mustard
  • 750 ml (1 1/4 c) sour cream
  • 8 small drained cocktail gherkins, chopped
  • Small bunch of chives1. Heat 15 grams (one tablespoon) of the butter in a large nonstick skillet. Add the onions over medium heat until slightly softened, two to three minutes.
    2. Add the mushrooms to the pan. Increase the heat to medium-high and cook, stirring, until they have softened and most of the liquid has evaporated, about five minutes.
    3. While the mushrooms are cooking, slice the beef filet very thinly, then cut it across the grain into thin strips (piling several slices on top of one another will speed up this process).
    4. Place the mushrooms and onions in a large bowl and set aside.
    5. Add another 15 grams (one tablespoon) of butter to the pan and increase the heat to high. Add half the beef and stir-fry until very lightly browned, two to three minutes, then remove it. Heat the remaining 15 grams (one tablespoon) of butter and cook the rest of the beef the same way.
    6. Return the onion, mushrooms and the first batch of beef with any juices to the skillet.
    7. Add the peppercorns to the pan with salt, to taste, and heat through for one to two minutes.
    8. Blend the mustard and sour cream together in a small bowl. Stir into the beef with the gherkins. Heat through gently, without boiling.
    9. Trim, rinse and dry the chives, then snip them over the top and serve.
