Who would guess that you could have the smooth flavour and texture of this rich dessert with minimal fat and calories? You can, thanks to sugar-free pudding mix and fat-free whipped topping, which save you a whopping 32 grams of fat.

Preparation time: 10 minutes
Serves: 4

Ingredients:

  • 500 ml (2 c) skim or fat-free milk
  • 1 package sugar-free instant chocolate pudding mix
  • 110 g (4 oz/1/2 c) fat-free whipped topping

Method:

  1. Pour the milk into a medium bowl and add the pudding mix. Stir until dissolved.
  2. Stir in the whipped topping.

Marble cheesecake

The combination of rich taste and creamy texture makes cheesecake one of the most beloved of all desserts. Keep the romance alive by using lighter ingredients.

Preparation time: 15 minutes
Cooking time: 1 hour 45 minutes plus chilling overnight
Serves: 12

Ingredients:

  • 85 g (3 oz) low-fat honey graham crackers (6 whole crackers)
  • 125 g (1/2 c) toasted wheat germ
  • 15 ml (1 tbsp) plus 250 g (1 c) sugar
  • 30 ml (2 tbsp) extra-light olive oil
  • 600 ml (19 oz/2 c) silken tofu, well drained
  • 450 g (1 lb) fat-free cream cheese
  • 45 ml (3 tbsp) flour
  • 1 large egg plus 2 large egg whites
  • 5 ml (1 tsp) vanilla extract
  • 50 ml (1/4 c) chocolate syrup

Method:

  1. Preheat the oven to 180°C (350°F).
  2. Combine the graham crackers, wheat germ and 15 millilitres (one tablespoon) of the sugar in a food processor and process into fine crumbs. Add the oil and process until moistened. Press the mixture into the bottom and part way up the sides of a 23 centimetre (nine inch) springform pan. Bake until set, about 10 minutes.
  3. Add the tofu, cream cheese, flour, egg and egg whites, vanilla, and the remaining 250 g (one cup) sugar to the food processor and process until smooth.
  4. Measure 300 millilitres (one cup) of the tofu mixture into a small bowl and stir in the chocolate syrup. Pour the remaining filling into the crust. Pour the chocolate mixture in a circle on top of the filling and swirl it in with a knife. Bake for 45 minutes. Turn off the oven and leave the cheesecake undisturbed for 45 minutes. Cool to room temperature before chilling overnight.
